I make a variation of this throughout the summer (I add tomato wedges to mine and toss with a little basic Italian dressing). When it’s chilled right out of the fridge, it really cools you down.

I do this almost every night! Cucumber, red onion, and sesame seeds with ginger dressing, and sometimes I add bacos. I’m a 90s kid, I love bacos.

Here in Colombia, to this salad we add some Mayo
